People's tastes are what they are and everyone is entitled to them. So bad coffee (in taste is very subjective).
But taste is not always what you should be chasing.
Origin, process and quality of extraction are all very important, so yes, you can skip the coffee shelves from your local grocery store.
Origin: Country of origin or altitude will definitely impact the taste. Buying coffee from companies who can provide informations on the origin is a sign of transparency and will most likely be roasted accordingly.
Process: By knowing the process in which your coffee was handled (from harvest to roast) you will be able to isolate tasting notes and train your palette. A washed or natural process will have an impact on the final product.
Quality of extraction: Did you purchase ground coffee or whole beans? Are you using the appropriate grind size when making espresso or pour-over? Is the water temperature optimal for the roast level (light, medium, dark)?
